I feel terrible that I’ve been absent from the blog for sooo long. Without getting into too many details our family has had a pretty crumby last few months. There’s been several deaths, including a very tragic, and unexpected one, that hit me extremely hard, and honestly, I’m still trying to work through my grief.

A few weeks ago my bestie requested that I whip up some Pumpkin Pie Cupcakes for a potluck she was hosting. I’ve never made pumpkin anything before, and I’ve never even tasted a pumpkin pie cupcake, so I was a little apprehensive to take on the task.
The Twincesses family birthday party, friend party, three (Canadian)Thanksgiving dinner parties, a trip to NYC, AND the potluck was all scheduled in the same week and a half…AHHH! So, with tons of baking to do for all of the events, I decided I needed to cut some corners. I wanted and needed to make things easier on myself with the potluck cupcakes, so with the help of a store bought cake mix, I crafted a 4 ingredient pumpkin pie muffin. I also whipped up a tasty cream cheese buttercream icing and voila-> delicious and easy-to-make pumpkin pie cupcakes! The cupcakes turned out so good that I nixed what I was going to bake for the Thanksgiving dinners, and instead just made more cupcakes! Easy peasy!
And since I missed out on posting this yummy recipe for our Canadian Thanksgiving, hopefully some of my American friends can give this recipe a try for theirs!
