Eggnog Trifle

You guys, it’s two freakin’ weeks until Christmas!!!

I feel pretty prepared for the most part, although I seriously fell behind this year on the shopping and baking! I’m typically done my shopping by October, and baking by November, but with the chaos of the past few months and with my mom currently in the hospital (since 2 1/2 weeks ago) I’m not quite ready! I still have 2 people to grab gifts for (totally heading to the mall this weekend) and as for the baking, well, oops, I only managed to make my family’s fave 4- ingredient Shortbread Cookies this year so far, and am planning on whipping up a few quick and easy Eggnog Trifles for family dinners as needed.I actually made this eggnog trifle as a test last year, (so pictures are old, and from my phone) and it turned out so great that I though I’d share it with you all now, so you have time to whip up your own over the holidays!

Eggnog Trifle is the perfect dessert for eggnog lovers (so are my favorite, Eggnog Sugar Cookies), as you can increase the eggnog to milk ratio for the pudding mix, or decrease it (like I do) to suit your guests, or your own taste. Holiday Eggnog Trifle
A delicious holiday treat featuring eggnog flavored cake, pudding, and whipped topping layers.

Instructions
  1. Combine cake mix, melted butter, eggs and 1 1/4 cups of eggnog. Mix well.
  2. Bake mini cupcakes at 350°C for about 10 minutes, or until you can insert a toothpick and it comes out clean. Let cupcakes cool.
  3. Combine instant pudding mix, 1 1/2 cups of milk, and 1 1/2 cups of eggnog and mix for 2-3 min.
  4. Pour half of pudding mix into trifle bowl and top with mini cupcakes.
  5. Cover cupcakes with whipped topping, either by using a large spoon, or filling an icing bag and piping it.
  6. Place remainder of pudding over the whipped topping, add more mini cupcakes, and then cover with whipped topping.
  7. Optional-Sprinkle with ground cinnamon and/or cinnamon sticks for garnish, and ENJOY!

  1. This is such a unique dish! My sister would love this. We might have to come up with a version that meets her dietary restrictions so that she can enjoy it.
