I am so glad this week is over, I’ve been looking forward to this weekend forever because there are tons and tons of Christmas craft sales, and I plan to shop ’til I drop! I love supporting small businesses, and buying handmade stuff that these hands cannot make! And speaking of Christmas, can you believe it’s just over a month away?! Craaazy!
I’ve already started my Christmas baking and have the goodies in the freezer because the weeks before Christmas are always so busy I didn’t want to stress out and scramble for time to bake! Even though baking is something I enjoy doing, I admit, I’m not a cookie person. There are like a million other sweets I would choose over a cookie, but I make them for my family and friends who love them! Every year my cousin requests that I make her Shortbread cookies. She says good ones are impossible to find, and that mine are the best. Even though I didn’t invent the recipe, (it was passed down to me) I’ll take the compliment! These are the melt-in-your-mouth kinda shortbread cookies! Bonus, this cookie recipe uses only 4 ingredients, so you probably already have everything on hand, and it’s super quick!
Normally I think that margarine can work okay as a butter substitute, but in shortbread cookies it just doesn’t work. They won’t turn out nearly as good unless you use butter.
FYI-You DON’T need to grease your pan at all, there is more than enough butter from the cookie dough. But for easier cleanup you can lay parchment paper on your pans.
